German Cole Slaw - Red Cabbage Salad

Germans very often serve American Cole Slaw but the most authentic German Cole Slaw is made with red cabbage. Try this recipe for a gourmet twist on traditional cole slaw.

Prep Time: 20 minutes

Cook Time: 15 minutes

Ingredients:

  • 2 heads red cabbage
  • 2 large white onions
  • 3 cloves of garlic (or less if you aren't a garlic fan)
  • 1 cup sweet cream
  • 5 eggs
  • 2 tablespoons Thyme
  • 2 tablespoons Caraway seeds
  • Cayenne Pepper to taste
  • 1/2 pound white hard cheese
  • 1/3 cup oil (olive oil adds a little more flavour but your oil of preference can be used.

Preparation:

  1. Boil eggs until hard.
  2. Shred cabbage - you can do this in your food processor if you have one.
  3. Shred cheese.
  4. Chop eggs into small pieces.
  5. Chop garlic and onion into small pieces.
  6. Mix oil, cream, garlic and spices together.
  7. Add cabbage and cheese to the oil and cream mixture - toss.
  8. Sprinkle with parsley and a litte more cayenne pepper.
  9. Put in refrigerator until ready to serve.
