Authentic German Potato Salad - German Potato Salad Recipe

German potato salad is the best - in fact, I am not sure there is any other that can compare. This one requires no mayonnaise which is a plus for those people that hate mayonnaise. Try this authentic Bavarian recipe for your next picnic.

Prep Time: 30 minutes

Cook Time: 20 minutes

Ingredients:

  • Potatoes - 2 pounds
  • Onions - 1 large white onions
  • Bacon - 1 pound
  • Vinegar - 6 tablespoons or to taste
  • Oil - 1/3 cup
  • Boullion - 1 cube beef or vegetable boullion
  • Green Onions - I bundle
  • Parsley - 2 tablespoons
  • Brown Mustard - (according to your taste) - 3 tablespoons

Preparation:

  1. Boil peeled or skins-on (according to your preference) potatoes in water and boullion for 15-20 minutes. (This may take longer if you are at high altitude). Don't let them get to soft - a fork should go in but the potatoes should not fall apart.
  2. Fry bacon and crumble bacon into small pieces.
  3. Dice the white onion and fry it in the bacon grease.
  4. Chop the potatoes into cubes.
  5. Mix the bacon, white onion, oil, mustard, and vinegar together in a bowl that will be large enough to hold your potatoes.
  6. Chop the green onions.
  7. Toss the cooled potatoes in your sauce along with the green onions.
  8. Sprinkle with parsley, salt and pepper to taste.
